I just remembered I am going to a recipe exchange on Saturday. We need to bring an appetizer or Valentine's Day treat to share with approx. 30 people and copies of the recipe.

When i think of v-day, I think of chocolate dipped strawberries. Yum! No recipe, though.
I do have a great raspberry chocolate cheesecake recipe. I make this almost every v-day. We love it.
Here's the recipe:
This cheesecake is easy to make, and easy to do variations on. Use whatever kind of chips you think will taste good. I like it with white chocolate and a graham cracker crust. Tom likes it with peanut butter chips and a graham cracker crust.
Crust: Mix together and press into a 9-10 inch springform pan:
2 c Oreo Crumbs
1/4 c sugar
1/2 c melted butter
Filling:
3 (8 oz) packages of cream cheese
1 c sugar
3 eggs
3/4 tsp vanilla
1/2 c. raspberry chocolate chips, melted
Cream the cream cheese. Add sugar a little at a time. Add eggs one at a time. Add vanilla. Pour 3/4 of the filling into the crust. Combine remaining filling with raspberry chips. Swirl into filling. Bake at 350 until center is set. Add a pan of warm water to oven to create a moist environment for cake to back.
Jess's recipe is making me hungry--sounds scrumptious! The following recipe is from the Deseret News 1/31/90 which became a big hit in Utah--I've made it many times with rave reviews. But it does need updating--it's THE NEXT BEST THING TO ROBERT REDFORD recipe--I guess you can change it to whoever you want--I'm going for Brad Pitt...let me know who you choose to carry on Robert Redford's name.
Recipe:
1 C flour
1/2 C butter or margarine
1 C chopped pecans
1 pkg(8oz)cream cheese softened
1 C sugar
1 t. vanilla
1 container(8oz)frozen whipped topping, thawed
1 pkg. (6&3/4oz)instant chocolate pudding mix
1 pkg. (6&3/4oz)instant vanilla pudding mix
3 C (whole)cold milk
1/4 t. almond extract(optional)
Grated semisweet chocolate(I buy a chocolate bar & grate it)
Combine flour, butter & nuts until crumbly. Press into greased 9X13 pan. Bake at 350 for 20 min. Cool thoroughly. Combine cream cheese, sugar & vanilla; blend until smooth. Fold in half of the whipped topping; spread over cooled crust. Using mixer, beat together the pudding mixes, milk & almond until smooth & thick. Spread over the cream cheese layer. Top with remaining whipped topping. Garnish with grated chocolate. I serve this with strawberries too. Serves 16
Another recipe I used to make around Valentines day was Eclair Cake--I got this recipe when we moved to Clayton Ca
Eclair Cake recipe:
2 pkg.instant vanilla pudding(I like using chocolate instead too)
3 & 1/2 C milk
box of graham crackers
6 oz cool whip--or more if you want it fluffier
Beat pudding & milk for 2 min. Fold in cool whip & blend. Line 9X13 pan with whole graham crackers. Pour half of the pudding over the top. Add another layer of graham crackers. Pour remaining pudding over the top. Add yet another layer of crackers & frost with chocolate frosting. Refrigerate over night or about 12 hrs. before serving.
Chocolate frosting:
3 T cocoa
3 T butter
3 T milk
1&1/2 C powdered sugar
Mix all ingredients together & frost.
